Vegan Tacos
You can make these vegan tacos in no time at all, and they are full of flavor. They are also a healthy choice because they are full of protein and fiber. Add your favorite toppings to make a taco night that everyone will enjoy.
Ingredients:
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- Optional toppings: avocado slices, shredded lettuce, salsa, vegan sour cream
Instructions:
Get black beans, corn, tomatoes, red onion, cilantro, lime juice, cumin, chili powder, salt, and pepper in a bowl
Mix them all together
Put the corn tortillas in a pan and heat them over medium-low heat for 30 seconds on each side
Put a little of the bean mixture in each tortilla
You can add avocado slices, shredded lettuce, salsa, or vegan sour cream as toppings if you want to
