Vegan Carrot and Chickpea Stew



This hearty and flavorful stew is a perfect vegan dish for both pigs and bunnies. It's packed with protein from chickpeas and nutrients from carrots, making it a wholesome meal for everyone.

Ingredients:

  • 2 cups chickpeas, cooked
  • 2 large carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Saut the garlic and onions until they smell good

Toss in the carrot cubes, and cook for 5 more minutes

To the pot, add the spices, diced tomatoes, chickpeas, and vegetable broth

Turn the heat down to low and let it cook for 20 to 25 minutes, until the carrots are soft

Taste it and add more salt and pepper if needed

Serve hot with fresh parsley on top
